Brown Butter Sweet Potato Alfredo

Enjoy the thick and creamy flavors of this brown butter sweet potato alfredo. The nutty flavor of the brown butter and the sweetness of the sweet potatoes work together to make a delicious sauce for fettuccine pasta.

Ingredients:

  • 2 large sweet potatoes, peeled and diced

  • 8 oz fettuccine pasta

  • 1/2 cup unsalted butter

  • 2 cloves garlic, minced

  • 1 cup heavy cream

  • 1 cup grated Parmesan cheese

  • Salt and pepper to taste

  • Fresh parsley, chopped for garnish

Instructions:

Boil the diced sweet potatoes until tender, then drain and set aside


Cook fettuccine pasta according to package instructions until al dente, then drain and set aside


In a large skillet, melt the butter over medium heat until it starts to turn golden brown and smells nutty, about 5-7 minutes


Add minced garlic to the browned butter and cook for another minute until fragrant


Transfer the cooked sweet potatoes to a blender, along with the browned butter and garlic mixture, heavy cream, and grated Parmesan cheese


Blend until smooth and creamy, adding more cream if needed to reach desired consistency


Season the sauce with salt and pepper to taste


Toss the cooked fettuccine pasta with the sweet potato alfredo sauce until well coated


Serve hot, garnished with chopped fresh parsley
